Spring is coming and we feel like eating more salads. They are a healthy and refreshing way to incorporate a variety of fresh and nutritious ingredients into our diet.
 
Salads can be very versatile in terms of flavour combinations and textures. If you're looking for a unique and delicious recipe, here's El Pajarero dried figs with rocket, lettuce varieties, spinach, slivered almonds and goat's cheese. This salad combines the sweetness of the dried figs, the freshness of the greens and the saltiness of the goat's cheese, all with a special dressing of honey and balsamic vinegar. Here are the ingredients and step-by-step instructions for you to prepare at your leisure.
 
 
 

Ingredients for 4 portions

 
-25 grams of rocket
 
-50 grams baby lettuce mix
 
-100 grams of baby spinach
 
-1 cup of dried figs El Pajarero
 
-1/2 cup crumbled goat cheese
 
-1/4 cup slivered almonds
 
-2 tablespoons honey
 
-2 tablespoons balsamic vinegar
 
-1/4 cup olive oil
 
-Salt and pepper to taste
 
 
 
You can adjust the quantities according to your needs and preferences. 
 
If you like, you can prepare the dressing a few hours in advance (maximum 24 hours) for a more intense flavour.
 
 
 

Instructions

 
1. Wash and dry the rocket leaves, lettuce varieties and spinach. You can use a salad spinner or simply dry them with kitchen paper. Then, mix all the leaves together in a large bowl and set aside.
 
 
2. Cut the El Pajarero dried figs into quarters and add them to the salad. Also add the crumbled goat's cheese and slivered almonds. These ingredients will add sweetness and texture to the salad.
