For more than 50 years, the family company Higos El Pajarero has been producing gourmet dried figs of excellent quality. The experience of both generations has allowed the company to constantly increase its production over the decades.

Fuensanta Carrillo Pulido, manager of the company, tells us that she still remembers when they started out producing about 20,000 kg per year. As of October 2022 the quantities amount to 2,380,000 kg per year.

The company takes pride in its figs, and each one is carefully inspected for any imperfections before being packed and shipped to stores around the world. The end result is a product that is not only delicious, but also quality.

To this day, as demand continues to grow each year, the company is always looking for new ways to expand its reach and bring its incredible figs to even more people.

El Pajarero figs are marketed both in Spain and in other countries. In fact, you can find them in specialty stores in the United States, in several European countries and in some Asian countries. In this map you can see some of the countries where our product arrives.

What can you see in the video?

If you haven't seen the video yet, you will be able to see the plantations and the whole production process throughout all the stages, both in Badajoz and Barcelona.

The first step is to find the right figs. We source figs from Extremadura, one of the best areas in Spain known for its high quality figs. Once the figs are harvested, they are taken to the Higos El Pajarero factory, where they are sorted, cleaned and stored.

This first part is carried out in the town of Cristina (Badajoz).

Once this process is completed, they are transported to Barcelona and taken to the Sant Vicenç dels Horts plant for packaging, packing and shipping. Always with the highest standards of quality and food safety, even during packaging for shipment!

So if you are looking for a natural, delicious and healthy product, El Pajarero's gourmet dried figs are sure to satisfy your sweet tooth, while providing important nutrients such as fiber, potassium, magnesium and calcium. In addition to consuming it on its own, you can also use it in delicious sweet or savory recipes. You will find them in this blog.

Delicious dried fig chocolates with chocolate and walnut hearts

Plus, the combination of the three ingredients is a great source of nutrients and antioxidants.

What does each ingredient give us?

We know, it's hard to believe that something so delicious can also be so good for you, but it's true! These chocolates are made with three superfoods: walnuts, dried figs and chocolate. Not only will they delight your taste buds, but they will also give your body a much-needed boost. Let's take a closer look at these three ingredients and what makes them so special.

Dried figs

Dried figs are one of the best sources of fiber. In fact, a single fig contains more than 4 grams of fiber, which is 16% of the recommended daily intake. Fiber is important for maintaining regularity and promoting intestinal health. In addition, dried figs are a good source of calcium, iron and potassium.

Nuts

These are an excellent source of protein, fiber and healthy fats. They are also loaded with vitamins and minerals such as vitamin E, magnesium and potassium. Studies have shown that eating nuts regularly can help lower cholesterol levels, reduce inflammation and improve blood sugar control. Not to mention they're a great source of energy, perfect for when you need a quick snack to get you through the afternoon slump.

Chocolate

We all know chocolate is delicious, but did you know it's also packed with antioxidants? Antioxidants help protect cells from damage caused by free radicals, unstable molecules that can cause cell death. Dark chocolate, in particular, has been shown to improve heart health by reducing blood pressure and bad cholesterol levels.

Ingredients for 10 chocolates

10 El Pajarero dried figs

5 walnuts

100 grams of dark chocolate

Preparation

You will see how simple it is

1) Choose 10 El Pajarero dried figs that are not too small. And better if they can stand on their own on a plate.

2) Cut the nuts into small pieces, the size depends on the figs you have chosen. Remember that each fig has a small piece of walnut inside.

3) Make a small cut in each fig, deep enough to fit the small piece of walnut that you have previously cut.

4) Once you have filled each fig with its nut, put them aside.

5) Melt the chocolate in a bain-marie (see below how we do it).

6) Once ready, take the fig from the top (if it has a stalk, the better) and dip it in the melted chocolate. Place it on a plate or tray and let it cool.

You just have to enjoy them as you like! For example with a blanket, a movie and a sofa is a great plan!

Suggestions for choosing the ingredients

As for the dried figs, the ideal ones are the ones from El Pajarero, as their sweetness, texture and sweetness are special for this recipe. They complement perfectly with the walnuts and the dark chocolate.

As for the walnuts, we have chosen those of Castilla, but you can also use California or Pecan nuts. With any of them they are also delicious.

The walnuts come from the European walnut tree and autumn is the best season to consume them.

Macadamia nuts are not recommended, because they are harder than the others, and since we have to cut the nuts, it is not as practical as with the other varieties.

Now it's time for the chocolate :) We use a 70% dark chocolate for baking because it is much easier to melt. We chose one of sustainable cultivation and gluten free, but according to the possibilities of each one, if you already have one of reference, it will surely suit you well too.

The recipe has no complexity, the only thing that may take a little more time is to melt the chocolate. We suggest that you chop it up and place it in a bowl or bowl. Then put cold water in a pot in which the bowl fits comfortably, place it over low heat avoiding the water to boil and stir it with a wooden spoon.

It is true that you can also melt it in the microwave, but on the stove, you have more control....

As you can see, these chocolates are not only delicious, but also nutritious. So the next time you're looking for a sweet treat that will also give your body a boost, grab a handful of these chocolates instead of nutrient-empty tidbits. Your body - and your taste buds - will thank you :)
