The brown sugar is optional, as you will add the sweetness with the dried figs, and even more if you add jam :)

  • 1 litre of neutral Vodka
  • 300gr sugar
  • 150gr water

Preparation

  • Put them in a container large enough to fit comfortably - at least 1.5 litres should be enough - and add the litre of vodka.

  • Once you have it, when it is lukewarm, pour it into the bowl with the figs and vodka.

Cake with dried figs El Pajarero

 

Christmas is the perfect time to get together with the family and share warm moments around a table full of delicious homemade dishes. 

Today, we bring you a delicious proposal: a fresh and dried fruit and nuts doughnut pastry. 

 

If you are enthusiastic about this traditional pastry dish but don't know where to start, don't worry, our step-by-step guide will show you how to prepare it.

Read on to find out what ingredients and utensils you need so that everyone in your family can enjoy this tasty experience.

 

Shall we get to work? Here's what you'll need:

 

Ingredients

  • 160 g wholemeal flour.
  • 170 g butter at room temperature.
  • 150 g dried figs.
  • 75 grams of peeled pecans.
  • 2 golden apples (yellow).
  • 8 g baking powder.
  • 3 eggs.
  • 180 g icing sugar.
  • 2 tablespoons of liquid vanilla.
  • 200 ml water.
  • 2 tablespoons of rum (optional).

 

Preparation

  1. Remove the stalk from the El Pajarero dried figs.
  2. Bring the water to the boil in a medium saucepan, remove from the heat and add the two tablespoons of liquid vanilla and the two tablespoons of rum if you have chosen to use it. Although it is optional, it gives it a more intense touch...
  3. Once the figs are ready, and you have removed the pan from the heat, place the dried figs in the liquid for 30 minutes. While they absorb the vanilla flavour, they also increase in size.
  4. While waiting, beat the butter at room temperature in a bowl together with 170 grams of icing sugar (10 grams will be reserved for the end). You will be able to see how a cream forms.
  5. Turn the oven on at 180º with heat from above and below.
  6. Add the 3 eggs to the butter cream and beat until smooth.
  7. Sieve the flour together with the yeast and add it to the butter and egg cream, beating constantly until you obtain a lump-free dough.
  8. Drain the figs and chop them together with the walnuts. As our figs are small, you won't need to cut them into many pieces, it's better if the pieces are medium-sized. 
  9. Peel the apples and cut into small cubes.
  10. Add the El Pajarero dried figs, walnuts and Golden apples to the dough and mix well.
  11. Grease the mould with butter and sprinkle it with a little flour.
  12. Cover the mould with the doughnut mixture and bake in the oven for approximately 30-40 minutes. However, this depends on the oven.
  13. Once baked, remove from the oven and leave to cool on a wire rack.
  14. Afterwards, remove from the mould and sprinkle with a little icing sugar.

Making crepes is easy and quick. They are also delicious. The versatility of combination, both sweet and savoury, is another great benefit.

 

The advantage of making them at home is that you can make them entirely to your own taste: thinner, thicker, smaller or larger, adding extra ingredients such as flavourings, vanilla essence, lemon zest or seasonings such as pepper or oregano, if you prefer them savoury: the sky's the limit...

 

 

Ingredients for 8 units

  • 110 g pastry flour 
  • 240 ml milk
  • 2 large eggs (better if they are L) 
  • 15 ml Sugar (optional) 
  • 2g Salt 
  • Lemon zest to taste Vanilla flavouring to taste Butter or cooking oil
  • For the filling: homemade dried fig jam to taste

 

Some tips you should know before preparing them

 

This recipe will make about 8 crepes. Depending on your sweet tooth, multiply the ingredients by the amount you want to make :)

 

To help you get started, we have included our favourite recipe for homemade fig jam to accompany your crepes. Here you can follow the instructions on how to make it. But before we get to that, let's go over a few things you need to know about the ingredients.

 

An important recommendation: sieve the flour, the preparation is much finer and without lumps.

 

If you are lactose intolerant or simply prefer a vegetable milk, soy milk does not usually interfere so much with the taste of the crepe itself. Oat milk "zero" (the one without sugar) is also very mild. Another thing you can do is to use half milk and half water.

 

As for the preparation, you can use the traditional whisk or an electric mixer. Whatever is most convenient for you. 

 

If you want all the crepes to be the same size and thickness, use a ladle. If you are not that fussy, you can use the same glass that you whipped the batter in. 

 

 

Preparation for the crepe batter

 

Add the eggs to the mixing bowl and then add the milk (or half water and half milk), add the salt, the sugar (remember that this is optional), the lemon zest and the vanilla essence. Beat all the ingredients well. 

 

When you see that the mixture has a uniform consistency, add the sifted flour. 

Beat again vigorously until the mixture is smooth and free of lumps.

 

Once you have a semi-thick batter, cover it and let it rest in the fridge for 30 minutes to 1 hour.

 

After that time, grease a non-stick frying pan with melted butter or neutral oil. If you overdo it, remove the excess with kitchen paper. Oil spray is usually very good. 

 

Heat the frying pan until it is hot. Then pour a portion of the batter into the centre of the frying pan and with the other hand, move it gently so that the batter spreads over the entire surface. 

 

Lower the temperature a little and let it cook for a couple of minutes. 

When you see that the edges are golden brown and start to pull away from the pan, you can carefully turn it over with a thin spatula.

Leave for another minute until golden brown.

 

Place them in a dish or container that allows you to cover them with a clean cloth. It is important to keep them warm and moist so that they do not dry out.

 

Once you have finished preparing them all, let them rest for a few minutes and then serve them with a delicious fig jam, or whatever you like best :)

Preparation

 

You will see how simple it is

 

1) Choose 10 El Pajarero dried figs that are not too small. And better if they can stand on their own on a plate. 

 

2) Cut the nuts into small pieces, the size depends on the figs you have chosen. Remember that each fig has a small piece of walnut inside. 

 

3) Make a small cut in each fig, deep enough to fit the small piece of walnut that you have previously cut.

 

4) Once you have filled each fig with its nut, put them aside.

 

5) Melt the chocolate in a bain-marie (see below how we do it).

 

6) Once ready, take the fig from the top (if it has a stalk, the better) and dip it in the melted chocolate. Place it on a plate or tray and let it cool.

 

You just have to enjoy them as you like! For example with a blanket, a movie and a sofa is a great plan!

 

 

Suggestions for choosing the ingredients

 

As for the dried figs, the ideal ones are the ones from El Pajarero, as their sweetness, texture and sweetness are special for this recipe. They complement perfectly with the walnuts and the dark chocolate.

 

As for the walnuts, we have chosen those of Castilla, but you can also use California or Pecan nuts. With any of them they are also delicious. 

The walnuts come from the European walnut tree and autumn is the best season to consume them.

Macadamia nuts are not recommended, because they are harder than the others, and since we have to cut the nuts, it is not as practical as with the other varieties.

 

Now it's time for the chocolate :) We use a 70% dark chocolate for baking because it is much easier to melt. We chose one of sustainable cultivation and gluten free, but according to the possibilities of each one, if you already have one of reference, it will surely suit you well too.

 

The recipe has no complexity, the only thing that may take a little more time is to melt the chocolate. We suggest that you chop it up and place it in a bowl or bowl. Then put cold water in a pot in which the bowl fits comfortably, place it over low heat avoiding the water to boil and stir it with a wooden spoon.

It is true that you can also melt it in the microwave, but on the stove, you have more control....

Preparation

 

First wash and cut the peeled pears into small cubes and the El Pajarero dried figs into small pieces.

  

Then mix the oat flakes with the eggs. We will obtain a semi-liquid preparation.

  

Next, add the figs and pears to the previous mixture.

 

Heat a non-stick frying pan and add a very small amount of oil or butter (just enough so that they do not stick together). Then with a large spoon, add two or three tablespoons of the preparation, the amount depends on the size of the pancake you prefer and also on the size of your frying pan.

 

Cook over medium heat for a couple of minutes. When they turn  lightly golden brown, you can flip them over. They cook quite quickly.

 

They are delicious on their own, but you can add toppings if you prefer. We have tried them with walnuts and one of these:

While the hindquarters are browning, take the liquid left over from the marinade, mix it with water, cook it and reduce it until you get a dense sauce.

 

Finally mix it with the figs.

 

As the figs El Pajarero (variety calabacita) are small in size, we introduce them whole in the reduced sauce and put them aside for a few minutes. We left the stalks, but if you prefer, you can remove them before soaking them in Oporto.

 

Now it is time to serve. On a bed of sauce, place a portion of chicken and some figs on top. You can add a few drops of sauce if you like. 

 

Leave room for the fine peas, which should be steamed with a pinch of salt. And if you prefer, drizzle them with a few drops of olive oil.

 

As a suggestion, serve it with a mixed seasonal vegetables salad. It combines perfectly with the sweet and sour flavor of the chicken with dried figs in Oporto.
