Ingredients:

 

3 Reineta or Golden apples

 

2 eggs

 

14 dried figs

 

150 gr flour

 

100 gr of brown sugar

 

1 sachet of baking powder

 

2 tablespoons cinnamon powder

 

2 tablespoons powdered sugar

 

1 tablespoon of pistachios, finely chopped

 

Butter

  

 

How to prepare an apple and dried figs tart

 

Firstly, peel the apples, cut them into pieces and put them in the blender.

 

Take the apples and add brown sugar, eggs and flour. Begin to blend until we get a doughy mixture. The crushed apples should combine with the dough, this is useful for giving a certain creaminess to the dough, as well as hydrating it.

 

Finally, add the yeast to the dough, to achieve the necessary consistency and creaminess. Once we have all the ingredients of the dough ready, grease the mold with butter and we will put the dough in it. Let it rest for a few minutes in the refrigerator while we prepare the dried figs.

 

Cut the figs in half into regular pieces. Distribute them evenly over the top of the cake without leaving any holes. Bake the tart for about 40 minutes until the dough is perfectly cooked.

 

Decorate the cake with a little powdered sugar and cinnamon, you can add a little honey, or some fruit jelly. Finally, sprinkle some ground pistachios, which will give the perfect touch both to the presentation and to the flavor. All these ingredients go very well with each other.

We bring you an extraordinary recipe for you to prepare for your family and friends, totally natural and healthy cookies you can impress your guests with.

The star ingredient is dried figs, with which you will also provide calcium, magnesium, fiber, etc.

 

The recipe is easy. Below we tell you the ingredients you will need so that you can anticipate and get everything before you start, at the bottom you will find the step-by-step guide. Let's go! 

 

 

Ingredients

For the dough:

100 g flour

 

100 g whole wheat flour

 

Half a teaspoon of ground cardamom

 

A quarter teaspoon of baking soda

 

A pinch of salt

 

140 g butter

 

60 g brown sugar 

 

3 egg yolks

 

1 teaspoon vanilla essence

 

 3 tablespoons of honey

 

Orange zest to taste

 

  

For the filling:

Dried figs 400 g

 

Orange juice 4 tablespoons

 

Orange zest

 

Lemon zest

 

Sugar 2 tablespoons

 

Cinnamon 1 teaspoon

 

Peeled almonds 40 grams

 

Triple sec liqueur (or triple sec)

 

Preparation

In a bowl, hydrate the dried figs with hot water. 

 

Meanwhile, prepare the dough. First beat the butter with brown sugar. Then add the egg yolks, honey, vanilla essence and orange zest. Finally, add the mixed and sifted dry ingredients and mix in the dough without kneading it yet. Then wrap the dough in plastic wrap and put it in the refrigerator. 

 

Return with the figs, strain them and mix with the orange juice, zest, sugar and chopped almonds. You can add a little triple sec liqueur to obtain that delicious orange flavor. 

 

On a floured kitchen paper, stretch the dough into a rectangle, leaving approximately 4 mm thick. Place a cylinder of filling on the dough and wrap them. Join and close the dough with the dough, pressing it with your fingers. 

 

Repeat the operation forming several cylinders.

 

Bake one or more cylinders in a medium oven for about 12 minutes, remove from the oven and cut immediately into rounds of 1 to 2 cm. 

 

Finally, sprinkle them with powdered sugar, now they are ready to enjoy!

 

 

 

Dried fig and rum cake.

 

Autumn is coming and we don't go out as much as in summer. We feel like cooking and baking for our family and loved ones. Therefore, today we bring you a delicious recipe with dried figs and rum, to surprise your favorite guests in a special way. Below we tell you what you will need for the cake and the filling.

 

For the dough Ingredients

 

  • 1 1/2 cups flour
     
  • 1/3 cup butter
     
  • 1 egg
     
  • 1 tablespoon sugar
     
  • 1/3 of a glass of cold white wine

 

 

Preparation 

In a bowl mix the flour and butter. When they are well combined, add the egg, sugar and wine. If necessary you can help yourself with a spatula or wooden spoon. Then knead lightly to obtain a smooth batter and set aside.

  

For the filling Ingredients 

  • 20 dried figs El Pajarero
     
  • 2/3 cup sugar
     
  • 1/4 cup water
  • 1/3 cup rum
     
  • 1/4 teaspoon salt

  

 

Preparation

Place a small saucepan with the water and sugar over medium heat. Meanwhile, cut the figs in half. Then add them to the preparation of water and sugar with the preparation half done. Once they soften, remove them from the heat.

 

To assemble the cake Preparation

 

Roll out the dough and place it in a pie dish. Trim the leftovers from the edge and press the bottom with a fork. Place the fig mixture and bake in the oven for 35 to 40 minutes at a high temperature (approximately 270 degrees). Serve warm. It's finger licking delicious! :-)

On these cold afternoons, when we feel like a nice cup of hot coffee or tea, there is nothing better than accompanying it with delicious home-made pastries.

 

Today we bring you the recipe of an authentic Italian delicacy: Il Buccellato. This delicious ring-shaped cake (also known as bagel) is filled with a variety of nutritious nuts that you can easily get your hands on. 

  

 

Ingredients for the dough

  • 1 kg wheat flour
     
  • 300 gr of sugar
     
  • 250 gr lard
     
  • 3 eggs
     
  • 150 ml milk
     
  • 1 sachet of yeast
     
  • grated orange peel
     
  • vanilla
     
  • orange juice

 

 

Ingredients for the filling

  • 400 gr dried figs El Pajarero
     
  • 100 gr of raisins
     
  • 150 gr of walnuts or pistachios
     
  • 150 gr almonds
     
  • 200 gr chocolate pieces
     
  • cinnamon 
     
  • wine (if you like)

 

 

Preparation

 

1. Place the butter and sugar in a bowl. Add the eggs one by one, then add the flour, the baking powder, and the grated orange peel. Add everything and form a smooth and homogeneous dough. Once you have it, wrap it with non-stick paper and put it in the refrigerator for an hour.

 

 

2. Now it is the turn of the filling. In a saucepan, place the dried figs, 1 beaten egg, the raisins, and the rest of the dried fruits, and add some wine if you like. Mix everything together and heat over medium heat for 10 minutes. Turn off the heat and let it cool.

 

 

3. Take the dough out of the fridge and roll it out with a rolling pin until it is 1.5 cm thick, form a rectangle and put the filling across the width as if forming a log. Then roll the dough and shape it into a round until you get the shape of a crown or doughnut. Slightly cut the dough crosswise until the filling is just visible.

 

 

4. When it has the correct shape, if you have filling left, place it on top. This will ensure that when it comes out of the oven, it will have an excellent color. If you do not have any filling mixture left, you can brush it with beaten egg. Place in the oven at 180º C, cook for 25 minutes, remove from the oven and brush again with the egg or the mixture. Put back in the oven for 5 to 10 more minutes.

 

 

5. To decorate, nuts ,cherries in syrup or polished fruit can be placed on top. It is important to serve it cold, because if you serve it hot, the buccellato may crumble.

These original and tasty sandwiches are a perfect surprise for anyone. The gentle sweetness of the dried figs and the perfumed marinade with olive oil are unbeatable. You have to try them.

Ingredients for 4 people: 

  • 400 g of lamb fillet
     
  • 1 handful of arugula
     
  • 4 sprigs of coriander
     
  • 2 sesame baguettes
     
  • 8 slices of sheep milk cheese
     
  • 8 dried figs El Pajarero

  

 

For the marinade: 

  • 1 teaspoon ginger powder
     
  • 1 teaspoon ground coriander
     
  • 1/2 lime
     
  • 30 cl olive oil

 

Preparation

1. First prepare the marinade; mix the olive oil with lime zest juice and the spices. Marinate the lamb filets and let them rest for 15 minutes.

 

2. Lightly fry the lamb steaks over high heat and drizzle them with the marinade. Continue cooking for 8 minutes over medium heat on both sides. Let the lamb cool down and slice them thinly.

 

3. Slice the bread and fill it with the arugula, cilantro, sheep milk cheese and diced dried figs Finish the sandwich by adding the lamb meat and enjoy.

  • 1 1/2 cups of all purpose flour
  • 8 dried figs El Pajarero
  • 1 teaspoon of baking powder
  • 1/2 a teaspoon of kosher salt or sea salt
  • 3 cups of oats
  • 1 cup of butter without salt at room temperature
  • 1/2 a cup of brown sugar

 

How to prepare it

Step 1

In a bowl, mix the flour, baking powder and salt. Add the oats and put them aside.

 

Step 2 

In a blender, stir the butter and the brown sugar until they become one, approximately for 1 minute. Beat the eggs and vanilla. Add the mixture to the flour until it’s well mixed. Stir the dry figs El Pajarero into the mixture. Let the dough rest for at least an hour or overnight (the dough can also be pre-cooked and frozen for future use)

 

Step 3

Preheat the oven at a high temperature. Cover one or two trays with baking paper. Distribute the dough throughout the trays, about the size of a spoon. Bake for 12 or 14 minutes or until the cookies are slightly golden. Let them cool down for a few minutes.

 

Recommendation: Enjoy them with a cup of tea and/ or vegetal or cow’s milk.

Dried fig pie with goat cheese, balsamic vinegar, honey and brown sugar

 

Today we bring you an amazing savoury plate: Dried fig pie with goat cheese, balsamic vinegar, honey and brown sugar. It's truly delicious!

 

Here in Higos el Pajarero we love to cook. We're always searching to create new sweet or savoury recipes that contribute to your diet and bring the nutrients you need.

 

This dried fig and goat cheese pie is perfect for autumn, easy to prepare and it contains very few ingredients. It's hard to imagine how all the ingredients combined can become this delicacy. Its flavor will surprise you.

 

What do you need for this pie?

 

  • 1 Short pastry
  • 12 dried figs El Pajarero
  • 1 Goat cheese roll
  • 200ml of cream
  • 100ml of balsamic vinegar
  • One spoonful of honey
  • 1 spoonful of brown sugar
  • Some rosemary leaves (it's better if they are fresh)

 

Let's make it!

 

First, bake the short pastry. Once in its mold, cut the remaining edges with a wooden utensil. To avoid it rising, and most of all so it stays even, we suggest that before putting it in the oven you place some baking paper over the pastry and cover it with chickpeas. The recommended temperature is 180 degrees celsius. Bake it for approximately 20 minutes. Although, this may vary depending on the pastry and the oven you are using. That's why it's important to keep an eye on it.

 

While the base for our pie is baking, cut 12 dried figs El Pajarero into half.

We suggest that for this recipe you rehydrate the figs. This is optional but recommendable.

An easy and fast way of doing it is once you've cut the figs in half, introduce them in hot water or even boil them for a short time. If you do it in your microwave in 2 or 3 minutes you will have the figs rehydrated and ready to be included in the recipe. If you have more time you can rehydrate them in cold water.

 

Once you have the figs ready, cut the goat cheese in medium slices and put them aside with the figs.

Meanwhile, beat two eggs and mix them with the 200 ml of cream. Add salt and pepper to your liking.

Cover the insides of the pastry with this mixture.

Afterwards, put the goat's cheese and the figs and bake them again at 180 degrees celcius for another 30 minutes approximately.

 

In the meantime, let's make the sauce. Add a spoonful of brown sugar, a spoonful of honey and 100 ml of balsamic vinegar into a small pan or saucepan, stir in low heat until dense.

 

Once we take the pie out of the oven, we can put the rosemary leaves (fresh or dried). Finally, we add the sauce of balsamic vinegar, brown sugar and honey. It gives it the perfect touch.

Recently we visited Toni's kitchen, located in Sant Vicenç dels Horts, a restaurant that serves homemade food elaborated with fresh, local produce. Toni surprised us with his amazing culinary creations. We have been able to delight ourselves with two meals and two desserts which were finger licking delicious. The first one was a fresh salad with goat's cheese and dried figs in syrup. Afterwards, chicken Oporto with dried figs in syrup, sweetened with stevia.

But as we well know, figs are also used to create delicious desserts and Toni had prepared not one, but two. One of them was cottage cheese with honey and dried figs in syrup and the other was natural yogurt with figs and wildberry marmalade. The taste of the figs allows for culinary masterpieces for the palate. It was truly a pleasant experience for all senses. One of the keys to having a good day is to start it with a good breakfast. But sometimes, mornings are so busy that you need something quick and easy to give you the energy you need to get going. This breakfast recipe is perfect for those days. All the ingredients are healthy, especially the El Pajarero dried figs (with rice flour). It's amazing that such a small fruit contains so much calcium, fibre, magnesium and potassium to give you the boost you need to get you through the day. 
 

Ingredients for 1 serving 

  • 1 plain Greek yoghurt (no sugar or sweetener)
  • 5 pieces of dried figs with rice flour El Pajarero
  • 2 generous tablespoons of oats
  • 1 medium red apple
  • Coconut oil

Preparation 

Start with the dried figs. Remove the stalks and cut them into 4 or 5 pieces or whatever size you prefer. You can also leave larger pieces or simply cut them in half.
 
Next, wash the apple and cut it into medium-sized slices and set them aside for a couple of minutes.
 
Then place the fresh Greek yoghurt in a bowl.
 
In the meantime, toast two tablespoons of oat flakes in a small frying pan and stir with a wooden spoon for 1 minute. It's best to do this at low heat because they toast quickly.
 
When the oats are toasted, put them on top of the Greek yoghurt.
 
Now it's time to brush the same pan you used to toast the oats with the coconut oil, wait a few seconds for it to heat up and then add the apple slices and the pieces of El Pajarero dried figs. Stir until both the apples and figs are golden brown. Check that they are evenly browned. They will be ready in a couple of minutes.
 
When they are ready, place the apples and the browned dried figs on top of the yoghurt and oatmeal. That's it. You'll see how this still-steaming preparation melts into the cool Greek yoghurt. It's a very satisfying sensation for your palate :)
