5 El Pajarero dried figs

 

3 tablespoons of oats (30 g) 

 

2 eggs

 

2 medium pears

Preparation

 

First wash and cut the peeled pears into small cubes and the El Pajarero dried figs into small pieces.

  

Then mix the oat flakes with the eggs. We will obtain a semi-liquid preparation.

  

Next, add the figs and pears to the previous mixture.

 

Heat a non-stick frying pan and add a very small amount of oil or butter (just enough so that they do not stick together). Then with a large spoon, add two or three tablespoons of the preparation, the amount depends on the size of the pancake you prefer and also on the size of your frying pan.

 

Cook over medium heat for a couple of minutes. When they turn  lightly golden brown, you can flip them over. They cook quite quickly.

 

They are delicious on their own, but you can add toppings if you prefer. We have tried them with walnuts and one of these:

 

Dulce de leche

 

Grated bitter chocolate

 

Cream (or whipped cream)

 

A scoop of vanilla ice cream

Ingredients for four servings

  • 4 hind quarters of free-range chicken
  • 200 grams of dried figs El Pajarero 
  • 200 ml of water or broth
  • 200 ml Oporto wine
  • 50 ml apple vinegar
  • Rosemary, salt and black pepper
  • 1 tablespoon of olive oil
  • 300g of fine peas for garnish

 

Preparation

Marinate the figs in the port and vinegar at least one hour in advance. 

 

Once marinated, drain the figs and put them apart. Keep the juice from the marinade.

 

Meanwhile, add two tablespoons of olive oil in a frying pan covering the entire base. While it's heating, season the chicken with salt, black pepper and rosemary. Brown the chicken on both sides. 

 

While the hindquarters are browning, take the liquid left over from the marinade, mix it with water, cook it and reduce it until you get a dense sauce.

 

Finally mix it with the figs.

 

As the figs El Pajarero (variety calabacita) are small in size, we introduce them whole in the reduced sauce and put them aside for a few minutes. We left the stalks, but if you prefer, you can remove them before soaking them in Oporto.

 

Now it is time to serve. On a bed of sauce, place a portion of chicken and some figs on top. You can add a few drops of sauce if you like. 

 

Leave room for the fine peas, which should be steamed with a pinch of salt. And if you prefer, drizzle them with a few drops of olive oil.

 

As a suggestion, serve it with a mixed seasonal vegetables salad. It combines perfectly with the sweet and sour flavor of the chicken with dried figs in Oporto.

My great grandmother used to prepare this Dried figs and nuts in jam, and I still remember it. I was young and this one was one of the first recipes she taught us to make. Today it’s still one of the family’s favorites. This recipe has been passed down from generation to generation and, even though it's almost intact, there have been some details added to it that have made it even more delightful.

 

Everyone in my family loves it and they still make it. IT also offers many possibilities, for example, my mother spreads it on toasted bread or fresh out of the oven. My nephews combine them with cheese, especially brie, goat cheese and camembert. My sister in law uses it to fill pastries and cakes. My brother loves adding it to meat.

 

Since we’re certain you’ll like it, we’ll provide you with the recipe so you can make it yourself. I’m sure you’ll find all kinds of creative combinations. The good thing about this recipe is that, besides the great properties that dried figs have for your health, they are much more long lasting than fresh figs and therefore, available all year round, so you can make this jam whenever you like :)

 

Ingredients

  

1 kg of dried figs El Pajarero

 

5 cups of water (1250 ml)

 

3 tablespoons of freshly squeezed lemon juice.

 

200 g walnuts (chopped small)

 

1 cup pine nuts

 

Anise seeds (to taste)

 

Sesame seeds (to taste)

 

500 g. of sugar (Our recipe calls for a small amount of sugar. If you like it very sweet, add more sugar, but the dried fig variety el pajarero is so sweet, that in our recipe we only add 200 g.)

 

 

Preparation

 

Firstly prepare the syrup by pouring water, sugar and the lemon juice in a big pot.

 

Stir the mixture with a wooden spoon and set it to high heat until it boils.

 

Lower the fire and let it simmer in low heat without covering it for 8 minutes.

 

Drop the dried figs without the stems and the anise seed in the syrup that you’ve prepared in the previous step and let it cook in low heat (without covering it) for about 30 minutes.

Meanwhile, toast the sesame seeds and nuts separately.

 

To toast the sesame seeds do the following: Place an unoiled pan to medium heat. Add the sesame seeds and move them constantly with a wooden spoon until the seeds start to look a bit more golden, approximately 2 to 3 minutes. Remove from the fire and let them cool down before adding them.

 

Crush or mince the walnuts with your hands (you don’t need the pieces to be very small).

 

Use the same pan you used for the sesame seeds, place it on medium heat, add the chopped walnuts and move them for about 2 to 3 minutes or until it changes the color lightly. Let them cool down and put them aside.

 

When it’s been 20 minutes of cooking at low heat the figs in the syrup add the raw pine nuts, toasted sesame seed and walnuts.

 

Stir in very well until all the ingredients are perfectly combined. Cook them at low heat for more than one minute and then let it cool down.

 

Pour the jam in glass containers and close them well. Place them in your freezer. Enjoy!

 

This jam oozes a delicate and fruity aroma, its colors are vibrant and they add a beautiful profusion of colors in the glass containers.

 

Everytime I prepare the jam from dried figs and walnuts, I travel through time and I see myself in my great grandmother's kitchen, a small place but with a big kitchen and, in the corner her old wooden bowl, silvers spoons and a big container with dried figs that she would dehydrate herself.

Every sunrise is a new beginning, so why not start the day with something special? This morning, we challenge you to prepare pancakes with dried figs and apples. They're sweet, nutritious and, best of all, quick and easy to make! Forget about flour, sugar and milk. All you need are a few simple ingredients and about 10 minutes. And since we'll prepare them in a skillet, you don't have to wait for the oven to heat up.

 

Let's get cooking!

 

Ingredients for two servings (for a 18cm diameter pan)

  • 3 dried figs El Pajarero
  • 3 tablespoons of oatmeal (30 g)
  • half a teaspoon of baking powder
  • 1 egg (or 2 egg whites)
  • Half an apple cut into thin slices
  • Cinnamon to taste

 

Preparation

First of all, combine the oat flakes with the baking powder, add the egg and mix. We'll get a semi-liquid preparation.

Heat a non-stick frying pan and place the mixture.

Cover and cook for 3 to 4 minutes.

Meanwhile, cut the dried figs and apples.

Take the lid off and spread the apple slices all around, following a circular pattern, add the dried figs and sprinkle some cinnamon on top.

 

Cover again and let it cook for 4 or 5 minutes more.

 

Meanwhile, enjoy the appetizing aroma of cinnamon and figs cooking while they slowly expand in your pan.

Mustard chicken tenderloin with dry figs

Ingredients for 4 servings

  • 12 pieces of chicken tenderloin
  • 16/20 dry figs El Pajarero
  • 3 medium onions
  • 200g of fresh peas
  • Old mustard to your liking
  • Bay leaves and any seasoning you like.

 

Preparation

Season the chicken and lightly pan-fry it with oil. Put it aside.

Cut the onion julienne style and poach them in the same pan. Season it. Let it cook until golden, meanwhile we will take off the stems of the dry figs El Pajarero, dice them and add them to the pan.

 

They will get moist while cooking, you'll see how delicious and tender they can get.

Afterwards make a long incision on the tenderloin and pour the mustard.

Then use a brush to coat all the pieces. Introduce the pieces into the pan so they finish cooking with the remaining ingredients. It’ll be ready in just a few minutes.

We suggest you make a side salad with lamb's lettuce, cherry tomatoes and chia seeds. They go very well with this meal.

 

For this dish we have chosen the old mustard because out of all of the varieties of mustard, this is the softest and less processed. That's why this is also a good plate for children. But if only adults will be having this meal, you can use any mustard you like. Whichever you choose will make it an exceptional dish. 

 

Who would have thought this meal was so easy to make? The recipe is easy and tasty. And if you feel a bit adventurous, you can try adding some of your own favorite spices. This breakfast recipe is perfect for those days. All the ingredients are healthy, especially the El Pajarero dried figs (with rice flour). It's amazing that such a small fruit contains so much calcium, fibre, magnesium and potassium to give you the boost you need to get you through the day. 
 

Ingredients for 1 serving 

  • 1 plain Greek yoghurt (no sugar or sweetener)
  • 5 pieces of dried figs with rice flour El Pajarero
  • 2 generous tablespoons of oats
  • 1 medium red apple
  • Coconut oil

Preparation 

Start with the dried figs. Remove the stalks and cut them into 4 or 5 pieces or whatever size you prefer. You can also leave larger pieces or simply cut them in half.
 
Next, wash the apple and cut it into medium-sized slices and set them aside for a couple of minutes.
 
Then place the fresh Greek yoghurt in a bowl.
 
In the meantime, toast two tablespoons of oat flakes in a small frying pan and stir with a wooden spoon for 1 minute. It's best to do this at low heat because they toast quickly.
 
When the oats are toasted, put them on top of the Greek yoghurt.
 
Now it's time to brush the same pan you used to toast the oats with the coconut oil, wait a few seconds for it to heat up and then add the apple slices and the pieces of El Pajarero dried figs. Stir until both the apples and figs are golden brown. Check that they are evenly browned. They will be ready in a couple of minutes.
 
When they are ready, place the apples and the browned dried figs on top of the yoghurt and oatmeal. That's it. You'll see how this still-steaming preparation melts into the cool Greek yoghurt. It's a very satisfying sensation for your palate :)

Today we bring you a dried fig and date pudding which will make everyone fall in love with your cooking and crown you as the most luxurious host :-) You can also prepare it as a gift or take it to a Christmas dinner to share it along with nougat, panettone and all the delicacies that we crave so much after dinner. Below we explain what we will need for the dried fig pudding and the steps to follow for its preparation. It's very easy.

 

Ingredients for 8 people

  • 100 g brown sugar 
  • 200 g butter 
  • 4 eggs
  • 75 g pitted dates
  • 75gr raisins
  • 75 g dried figs
  • Grated zest of one orange 

 

Preparation

Before mixing the ingredients, the first thing to do is to preheat the oven at 180ºC.

Let's begin. First, beat the butter and the sugar together. Then add the egg yolks one by one, then the dried figs, the raisins, the pitted dates and the orange zest. Next add the flour and stir so that everything comes together well. Afterwards, beat the four egg whites until stiff. Finally, pour the mixture into a pudding mold and bake it for approximately 50 minutes. 

 

If you want to give it a special touch, dip a cloth in cognac or rum and then wrap it around the pudding. Then cover everything in aluminum foil and keep it for up to two weeks in a dry and dark place.

The Pajarero figs variety are a kind of pear shaped fruit, with a red pulp full of edible seeds that have an unmistakable sweet flavor and a particular texture that make it a truly remarkable food. Recently we visited Toni's kitchen, located in Sant Vicenç dels Horts, a restaurant that serves homemade food elaborated with fresh, local produce. Toni surprised us with his amazing culinary creations. We have been able to delight ourselves with two meals and two desserts which were finger licking delicious. The first one was a fresh salad with goat's cheese and dried figs in syrup. Afterwards, chicken Oporto with dried figs in syrup, sweetened with stevia.

But as we well know, figs are also used to create delicious desserts and Toni had prepared not one, but two. One of them was cottage cheese with honey and dried figs in syrup and the other was natural yogurt with figs and wildberry marmalade. The taste of the figs allows for culinary masterpieces for the palate. It was truly a pleasant experience for all senses. Today we bring you an amazing savoury plate: Dried fig pie with goat cheese, balsamic vinegar, honey and brown sugar. It's truly delicious!

 

Here in Higos el Pajarero we love to cook. We're always searching to create new sweet or savoury recipes that contribute to your diet and bring the nutrients you need.

 

This dried fig and goat cheese pie is perfect for autumn, easy to prepare and it contains very few ingredients. It's hard to imagine how all the ingredients combined can become this delicacy. Its flavor will surprise you.

 

What do you need for this pie?

 

  • 1 Short pastry
  • 12 dried figs El Pajarero
  • 1 Goat cheese roll
  • 200ml of cream
  • 100ml of balsamic vinegar
  • One spoonful of honey
  • 1 spoonful of brown sugar
  • Some rosemary leaves (it's better if they are fresh)

 

Let's make it!

 

First, bake the short pastry. Once in its mold, cut the remaining edges with a wooden utensil. To avoid it rising, and most of all so it stays even, we suggest that before putting it in the oven you place some baking paper over the pastry and cover it with chickpeas. The recommended temperature is 180 degrees celsius. Bake it for approximately 20 minutes. Although, this may vary depending on the pastry and the oven you are using. That's why it's important to keep an eye on it.

 

While the base for our pie is baking, cut 12 dried figs El Pajarero into half.

We suggest that for this recipe you rehydrate the figs. This is optional but recommendable.

An easy and fast way of doing it is once you've cut the figs in half, introduce them in hot water or even boil them for a short time. If you do it in your microwave in 2 or 3 minutes you will have the figs rehydrated and ready to be included in the recipe. If you have more time you can rehydrate them in cold water.

 

Once you have the figs ready, cut the goat cheese in medium slices and put them aside with the figs.

Meanwhile, beat two eggs and mix them with the 200 ml of cream. Add salt and pepper to your liking.

Cover the insides of the pastry with this mixture.

Afterwards, put the goat's cheese and the figs and bake them again at 180 degrees celcius for another 30 minutes approximately.

 

In the meantime, let's make the sauce. Add a spoonful of brown sugar, a spoonful of honey and 100 ml of balsamic vinegar into a small pan or saucepan, stir in low heat until dense.

 

Once we take the pie out of the oven, we can put the rosemary leaves (fresh or dried). Finally, we add the sauce of balsamic vinegar, brown sugar and honey. It gives it the perfect touch.

Brown rice with dried figs and mussels

This recipe can be made in less than 30 minutes so this is perfect if you're low on time or simply don't feel like cooking.

 

Ingredients for 4 plates

 

Brown rice: 250g (8,8oz)

Dried figs El Pajarero: 20 figs

Fresh or frozen mussels: 24 mussels approximately.(depending on their size)

Purple onion: 1 big onion

Coconut oil to your liking

Garlic: 2 cloves

Nutmeg to your liking

Dry bay leaves: 3 (optional)

 

Preparation:

 

1. Cook the rice until soft

 

2. Cut the dried figs into small bits. You can obtain three to four pieces per fig depending on the fig's size. Once you have them, soak them in hot water for 5 minutes to rehydrate them, then let them dry on a paper towel.

 

3. Steam the mussels and put them aside or defrost about 24 pieces. We recommend that you add the bay leaves to the mussel water. It gives them an extraordinary touch.

 

4. We will add two to three spoonfuls of coconut oil in a frying pan and we'll fry them with a thinly sliced onion. When it's golden, we'll add the drained brown rice, the figs and the mussels.

 

5. Mix all the ingredients and add a bit of nutmeg. Other spices that go well with this meal are black pepper and cumin. Although you can add some of your favourite spices, you will have your meal ready. The

only thing that's left to do is to enjoy it!

 

This delicious brown rice with dried figs and mussels is creamy and full of texture, very similar to risotto. And as we said in the beginning, not only is it easy and quick but it's healthy.
