Cake with dried figs El Pajarero

 

Christmas is the perfect time to get together with the family and share warm moments around a table full of delicious homemade dishes. 

Today, we bring you a delicious proposal: a fresh and dried fruit and nuts doughnut pastry. 

 

If you are enthusiastic about this traditional pastry dish but don't know where to start, don't worry, our step-by-step guide will show you how to prepare it.

Shall we get to work? Here's what you'll need:

 

Ingredients

  • 160 g wholemeal flour.
  • 170 g butter at room temperature.
  • 150 g dried figs.
  • 75 grams of peeled pecans.
  • 2 golden apples (yellow).
  • 8 g baking powder.
  • 3 eggs.
  • 180 g icing sugar.
  • 2 tablespoons of liquid vanilla.
  • 200 ml water.
  • 2 tablespoons of rum (optional).

 

Preparation

  1. Remove the stalk from the El Pajarero dried figs.
  2. Bring the water to the boil in a medium saucepan, remove from the heat and add the two tablespoons of liquid vanilla and the two tablespoons of rum if you have chosen to use it. Although it is optional, it gives it a more intense touch...
  3. Once the figs are ready, and you have removed the pan from the heat, place the dried figs in the liquid for 30 minutes. While they absorb the vanilla flavour, they also increase in size.
  4. While waiting, beat the butter at room temperature in a bowl together with 170 grams of icing sugar (10 grams will be reserved for the end). You will be able to see how a cream forms.
  5. Turn the oven on at 180º with heat from above and below.
  6. Add the 3 eggs to the butter cream and beat until smooth.
  7. Sieve the flour together with the yeast and add it to the butter and egg cream, beating constantly until you obtain a lump-free dough.
  8. Drain the figs and chop them together with the walnuts. As our figs are small, you won't need to cut them into many pieces, it's better if the pieces are medium-sized. 
  9. Peel the apples and cut into small cubes.
  10. Add the El Pajarero dried figs, walnuts and Golden apples to the dough and mix well.
  11. Grease the mould with butter and sprinkle it with a little flour.
  12. Cover the mould with the doughnut mixture and bake in the oven for approximately 30-40 minutes. However, this depends on the oven.
  13. Once baked, remove from the oven and leave to cool on a wire rack.
  14. Afterwards, remove from the mould and sprinkle with a little icing sugar.
