Delicious biscuits made of dried figs and wholemeal flour with no added sugar!

Ingredients

- 1 and 1/2 cups El Pajarero dried figs, chopped into small pieces

- 1 cup whole wheat flour

- 1/2 cup melted butter

- 2 eggs

- 1 teaspoon vanilla essence

- 1/2 teaspoon of baking soda

- Pinch of salt

 

Steps to follow

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

 

2. In a large bowl, mix together the wholemeal flour, bicarbonate of soda and pinch of salt. Make sure they are well integrated.

 

3. Add the melted butter, eggs and vanilla essence to the flour mixture. Mix well until you obtain a homogeneous dough.

 

4. Add one cup of chopped dried figs to the batter and mix again to distribute evenly. Reserve the other half cup.

 

5. Form balls of dough and place them on a baking sheet covered with waxed paper, making sure to spread them a little apart to prevent sticking. Then gently press each ball and decorate with dried fig pieces.

 

6. Bake the biscuits in the preheated oven for approximately 12-15 minutes, or until lightly browned on the edges.

 

7. Remove from the oven and allow the biscuits to cool completely on the tray before transferring to a cooling rack.
